Los Tarascoswas founded by Hugo and Maria Caballero in 1994 right
next door to the location it’s in today. They moved from Mexico to start
a better life in the states, and with Hugo having experience in the
restaurant industry practically all his life and with their cooking skills,
Los Tarascos was born.
The reason it’s named Los Tarascos is due to its unique cuisine.
Los Tarascos are the indigenous people in the native state, Michoacan,
of Hugo and Maria Caballero and all their recipes are from that area.
Hence, Los Tarascos was an appropriate name. Because, all our food
is from that region of Mexico you will not find Tex-mex style food
in the menu, but the most genuine Mexican food in Fort Collins and
the best seafood dishes.
